Wheat Pita Bread Stuffed with Roasted Veggies

Wheat pita bread is not only delicious but also provides a hearty and healthy option for stuffing with your favorite roasted vegetables. This recipe is perfect for a satisfying lunch or dinner, packed with nutrients and flavor.

Ingredients:

• 2 Mediterranean Bread Company Wheat Pita Breads

• 1 zucchini, sliced

• 1 yellow squash, sliced

• 1 red bell pepper, sliced

• 1 red onion, sliced

• 2 tablespoons olive oil

• 1 teaspoon dried thyme

• 1 teaspoon dried oregano

• Salt and pepper to taste

• 1/4 cup crumbled feta cheese (optional)

• Fresh parsley for garnish

Instructions:

1. Preheat your oven to 400°F (200°C).

2. In a large bowl, toss the sliced zucchini, yellow squash, red bell pepper, and red onion with olive oil, dried thyme, dried oregano, salt, and pepper.

3. Spread the vegetables on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.

4. While the vegetables are roasting, warm the wheat pita breads in a toaster or on a skillet.

5. Once the vegetables are done, stuff the warmed pita breads with the roasted veggies.

6. If desired, sprinkle crumbled feta cheese over the veggies and garnish with fresh parsley.

7. Serve immediately and enjoy a nutritious and delicious meal!
