• 2 Mediterranean Bread Company Wheat Pita Breads

• 4 eggs

• 1/4 cup shredded cheese (cheddar, mozzarella, or your choice)

• 1/2 avocado, sliced

• Handful of spinach leaves

• Salt and pepper to taste

• Optional: cooked bacon or sausage, hot sauce

Instructions:

1. Warm the wheat pita breads in a toaster or on a skillet until soft.

2. In a non-stick skillet, scramble the eggs over medium heat until fully cooked. Season with salt and pepper.

3. Place the scrambled eggs on the warmed pita bread.

4. Sprinkle shredded cheese over the eggs, allowing it to melt slightly.
