If you’re looking for a light and healthy meal that’s bursting with flavor, this Mediterranean Pita Bread Salad is the perfect choice. Made with fresh vegetables, tangy feta cheese, and Mediterranean Bread Company’s delicious pita bread, this salad is both nutritious and satisfying.
Ingredients:
• 2 Mediterranean Bread Company Regular Pita Breads
• 1 cup cherry tomatoes, halved
• 1 cucumber, diced
• 1 red bell pepper, diced
• 1/4 red onion, thinly sliced
• 1/2 cup Kalamata olives, pitted and halved
• 1/2 cup crumbled feta cheese
• 1/4 cup fresh parsley, chopped
• 1/4 cup extra virgin olive oil
• 2 tablespoons red wine vinegar
• 1 teaspoon dried oregano
• Salt and pepper to taste
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Cut the pita bread into small triangles and place them on a baking sheet.
3. Bake the pita triangles for 8-10 minutes, or until they are crispy and golden brown. Set aside to cool.
4. In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, Kalamata olives, feta cheese, and parsley.
5. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
6. Pour the dressing over the salad and toss to combine.
